Alverno Selects Unidine to Deliver a New Fresh Food Dining Experience

Regardless of your age, everyone loves a great, freshly cooked meal! Food fuels our bodies and mealtimes present opportunities for social interaction. As a result, dining is critically important in long term care settings. Much of the day revolves around meals and how the food is prepared and presented receives a great amount of attention.
Recently, The Alverno welcomed Unidine, a dining services company that has been transforming mealtimes into a culinary oasis for residents, staff and guests. Unidine was the first dining management company to commit to the exclusive use of fresh ingredients and from-scratch cooking. In 2016, the company was named to the Rodale 100 – the only foodservice company recognized on the list of “people, products and companies changing the face of health and wellness.”

All Unidine team members sign a Fresh Food Pledge committing to this approach to cooking which hangs in the kitchen with commitments such as:
· All soups, sauces, salad dressings and gravies are made from scratch using fresh ingredients.
· Deli meats, such as beef, turkey and chicken are roasted and prepared in-house.
· Rolls, muffins, cookies and pastries are baked in-house.
· Menus are seasonal and incorporate locally-sourced ingredients

Unidine's creative approach to preparing meals also benefits those who are on special diets.

FreshBitesSM transforms traditional menu selections into finger foods so those with diminished motor control or roaming dining needs enjoy a renewed sense of independence and dining satisfaction.


Puree With PurposeSM is an award winning program that empowers residents with dysphasgia to “dine with dignity” by enjoying meals with the same great flavors, aromas and appearances as their peers.


Hydrate for HealthSM is an innovative program that encourages hydration. Visually stimulating new hydration stations can be seen throughout The Alverno. The new fruit, vegetable and herb infused water stations have been a hit with residents, staff and guests and help promote a healthy lifestyle.


FreshBenefitsSM was developed to provide enriched snacks and fortified foods that are prepared with fresh ingredients to replace commercial nutrition supplements.
